Ok, so i’ve been experimenting a lot lately with spelt flour (as well as rice flour, and buckwheat flour). Now I’m thinking this recipe will work with any of the aforementioned flours, and I will definitely be trying this with the buckwheat flour, which I’m a big fan. This recipe I have created for making waffles that become my sandwich bread slices. Now I can have my two slices of spelt flour “bread” that I made, and I know what is in it.
Enough lead up, here you go (on our waffle iron this makes three waffles)
- 1/4 cup spelt flour
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1 egg
- 1/8 tsp oil (I use virgin sunflower)
- 1/8 tsp sugar (optional)
- 1/2 cup milk (will check this amount as i am unsure, just poured till i liked the texture).
- Mix all ingredients in the order as listed. You may have to add a little water or a little more milk if your batter turns out too thick.
