Gluten Free Pancakes

I just made up some of the most delicious alternative flour pancakes I’ve ever had. If you try these pancakes out please drop me a line or a comment and let me know how you liked them, or how you made them even better.

Gluten Free Pancakes
An excellent gluten free adaptation for Americas favorite breakfast bread.

  1. 1/2 cup buckwheat flour
  2. 1/2 cup brown rice flour
  3. 1/4 cup coconut flour
  4. 1 cup buttermilk
  5. 1/2 cup milk
  6. 1 egg
  7. 1/2 teaspoon baking soda
  8. 1 tablespoon olive oil
  9. sugar to taste (optional)
  10. Water as needed to thin
  1. Mix all ingredients and cook like pancakes, slow over medium heat.
  1. I made these up this morning. I measured the flours but that was all. The buttermilk, milk, and baking soda measurements are a bit of a guess of what I did. a little modification may be needed. I hope everyone likes them, the family here sure did
